BASE RECIPE:
1 LITER OF WHOLE MILK (COW OR GOAT)
1 CUP LIVE CULTURE BUTTERMILK
3 TBSP WHITE VINEGAR or lemon juice

Add once drained 1/4 tsp SALT

Heat Milk on medium high to 180 degrees, constantly stirring as to not burn on the bottom. Turn off heat add room temp buttermilk, then add vinegar. Stir gently twice and let sit 10 minutes. Ladle curds into fine strainer or cheese cloth, twist and compress and let drain for 10-12 hours at room temp.
